The late Jack Lockton founded Lockton Companies in 1966 in Kansas City, Missouri, and opened the company’s first regional office in Denver in 1979. Since then, Lockton Companies has become the world’s largest privately held insurance brokerage firm with offices across the globe and is known for its client-focused culture and being an employer of choice. Jack Lockton was passionate, energetic, and loved by all, and unfortunately passed from pancreatic cancer in 2004.
In honor of Jack and his Kansas City roots, the restaurant specializes in slow-cooked meats and house-made barbeque sauce. The pulled pork and prime rib is cooked for 24-hours, ensuring the meat is tender, juicy, and melts-in- your-mouth. The baby back ribs are slow-roasted, grill finished, and literally fall off the bone — just like Jack used to make for his friends, clients, and family! The barbeque sauce is house-made and is true to it’s Missouri heritage.
Jack’s Executive Chef and co-owner, Lindsay Donnelly, was born, raised, and professionally trained in England, bringing over 30 years of experience to the kitchen. Donnelly’s restaurants ranged across the U.K. and Europe, with the most notable being the star-studded “La Margherita” Italian restaurant formerly in Southampton, England; some of his authentic British recipes made their way to the menu, like the Southampton Style Fish & Chips.
The restaurant’s owner Steve Lockton is a business professional and shareholder in other restaurants across town, like Punch Bowl Social and Biker Jim’s Gourmet Dogs. Steve is also an owner and member of the Board of Directors at Lockton Companies Inc., the world’s largest privately-held insurance brokerage firm.
Steve has fond memories of his father Jack, who his kids adoringly called him GrandJack. Pictured here, along with Sami Hauser Lockton, Steve’s wife and the restaurant’s wine manager, are his daughters Carley and Olivia.
